Ingredients:

2 (6-8 oz) filet mignon steaks
Salt and pepper (as desired)
1 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
2 sprigs fresh thyme
1 spring fresh rosemary

Food Prep :

  • Remove the filet mignon steaks from the refrigerator and let them come to room temperature for at least 30 minutes.

  • Preheat the oven to 400°F.

  • Season the filet mignon steaks with salt and pepper on both sides.

  • Heat a cast iron skillet over high heat until it is smoking hot.

  • Add the olive oil to the skillet and swirl to coat the bottom of the pan.

  • Add the filet mignon steaks to the skillet and sear for 2-3 minutes on each side until a crust forms.
