This Avocado Toast with Egg recipe is an easy-to-make dish features creamy avocado spread on toasted bread, topped with a soft-boiled egg, and finished with a sprinkle of salt and pepper. It's packed with healthy fats, protein, and fiber, making it a satisfying and nutritious meal.

Ingredients:

1 ripe avocado
2 slices of whole grain bread
2 eggs
Salt & pepper

Optional toppings:
sliced tomatoes, hot sauce, or fresh herbs

Cookware:

Toaster or Toaster Oven
Medium saucepan
Slotted spoon
Small bowl
Fork

Food Prep :

  • Start by boiling water in a medium saucepan. Once the water comes to a boil, reduce the heat to a gentle simmer.

  • Carefully place the eggs into the simmering water with a slotted spoon.

  • Cook for 6-7 minutes for a soft-boiled egg, or longer if you prefer a firmer yolk.

While the eggs are cooking, carefully slice the avocado in half and remove the pit. Use a fork to mash the avocado in a small bowl until it reaches a spreadable consistency.

Toast the bread until golden brown.


Let’s Put it Together:

  • Spread the mashed avocado on the toast.

  • Once the eggs are cooked, use the slotted spoon to remove them from the water and place them on a clean towel. Allow them to cool for a few seconds before peeling.

  • Slice the eggs in half and place them on top of the avocado toast.

  • Sprinkle with salt and pepper, and any additional toppings you desire.

  • Take a moment to gawk at your good work, AND ENJOY!!!

Altitude Guidelines:

At high altitudes, water boils at a lower temperature, so you may need to adjust the cooking time for the soft-boiled eggs. A good rule of thumb is to add an additional 30 seconds of cooking time for every 1,000 feet above sea level.
