This Avocado Toast with Egg recipe is an easy-to-make dish features creamy avocado spread on toasted bread, topped with a soft-boiled egg, and finished with a sprinkle of salt and pepper. It's packed with healthy fats, protein, and fiber, making it a satisfying and nutritious meal.
You can also never go wrong with avocado : ).

Ingredients:
4 slices of bacon
2 large eggs
Salt and pepper (to taste)
Fresh chives, chopped (totally optional)

Food Prep :
Start by boiling water in a medium saucepan. Once the water comes to a boil, reduce the heat to a gentle simmer.
Carefully place the eggs into the simmering water with a slotted spoon.
Cook for 6-7 minutes for a soft-boiled egg, or longer if you prefer a firmer yolk.
While the eggs are cooking, carefully slice the avocado in half and remove the pit. Use a fork to mash the avocado in a small bowl until it reaches a spreadable consistency.
Toast the bread until golden brown.
Let’s Put it Together:
Spread the mashed avocado on the toast.
Once the eggs are cooked, use the slotted spoon to remove them from the water and place them on a clean towel. Allow them to cool for a few seconds before peeling.
Slice the eggs in half and place them on top of the avocado toast.
Sprinkle with salt and pepper, and any additional toppings you desire.
